I LOVE enchiladas. But they are tedious sometimes (not to mention expensive when you're gluten free...) For 8 gluten free tortillas-it's $5.99 at my local health food market. Yikes! I know I could simply use corn tortillas but I wanted something simpler. So, I invented a way that bypasses the tortilla and incorporates rice instead! This meal can be thrown together quickly and then the oven does the rest of the work! It's a perfect busy day meal. It always gets devoured fast when I make it! To make this dairy free...Simply sub in your own favorite dairy free cheese OR you can leave the cheese out altogether. Just be sure to increase the salt to 1 tsp.

Well, it's the final countdown! I'm due in 9 days but we'll see when this little precious baby girl wants to come... Until then I'll only be posting 2x a week instead. I turned this meal into a finger foods! Audrey loved it. I served raw organic carrot sticks and my oven baked french fries with my muffins. So after becoming gluten (and dairy) free, I had basically given up hope of ever eating this yummy dish again. This next recipe is a staple, my friends, at our house. We nearly have it at least 2x a month. (Which is big-because we rarely repeat the same meal that often. You can find these GF Taco Shells in most grocery stores. Looking for a Gluten Fre taco shell? Ortega now makes one that you can find in most grocery stores. (Only note: Don't be fooled by the 25% larger sign though on the package...when we opened ours, we were a little confused what they were talking about. They're the same size as other taco shells so just expect that when you open them.) They have a great flavor though and are made from 100% whole kernel corn. I have a confession...the crockpot has become one of my best friends this summer... Hot temperatures outside, being very pregnant, and not wanting to spend time on my feet cooking over a hot stove has turned me to some great simmer-all-day meals that I LOVE! As some of you know, my husband has been on a (boring) cleanse diet. It seriously has halted some of my creative dishes! I mean, how many meals can you come up with with just meat and veggies. So, as my search for creative meals continues, I have a great new recipe to share with you! These burgers are super easy to throw together and with my husband's special cooking method- you're bound to see success on the grill! Rainy day or no grill? You can also cook these indoors as well. We served our burgers with fresh carrot sticks and cucumbers for an amazingly tasty & healthy meal! My husband ate his in a cabbage "bun" while Audrey and I used my yummy gluten free hamburger buns. This recipe is approved for my husband's (Dr. Nielsen's) Candida Cleanse. Don't be fooled by the healthiness of this next recipe! It's super yummy and you'll be plenty satisfied with all the wonderful variety and flavors. I wish I could claim this glorious recipe but it was originally created by the tastykitchen. I simply adapted it to fit our needs. I've been searching for recipes that my entire family can all eat right now because my husband is currently on a special Intense Cleanse similar to the Candida Cleanse. Not only can he not have wheat or dairy but a whole bunch of other foods as well! It basically boils dinner down to mostly veggies and meat. ;) (Which, don't get me wrong, are always great to have but I LOVE variety!) Be sure to see the recipe alterations for special diets. Add 1/4 of the chicken broth, sun-dried tomatoes, and broccoli. Saute for 5 minutes. Add the peas, chicken, and remaining 3/4 cup of chicken broth. Shake about 1/4 cup parmesan cheese into the mixture (just enough to thicken the chicken broth). If using Nutritional Flakes, the sauce may not thicken fully. 5. Reduce heat to medium-low, cover, and simmer for 3 minutes. Serve mixture on top of spaghetti squash or combine all together. Garnish with more parmesan cheese. Special alterations:This recipe can be used on Dr. Nielsen's Candida Cleanse. Simply omit the cheese, and sub fresh tomatoes for the sun-dried.
